When you want to impress, this is the dessert to create! While a bit time consuming, and a bit sweet, it is filled with fruit, and a small slice goes a long way in the satisfaction department!
Recipe type: dessert
1 yellow cake mix
¼ cup water
¼ cup brown sugar
¼ cup butter, softened
½ cup chopped walnuts
1 large container of Cool Whip (or homemade whipped cream 1 ½ pints of heavy cream, 3 tbsp confectioners sugar, 1 tsp vanilla extract)
1 jar apricot preserves
2 pints strawberries, halve all but 3 strawberries
1 pint blueberries
3 dozen red and green seedless grapes
1 kiwi, peeled and sliced
1 20 oz can pineapple chunks in syrup, drain and reserve syrup for apricot glaze
1 can mandarin oranges, drained
Heat oven to 350 degrees.
Grease and flour a 14” bottom diameter pizza pan (16” fluted edge)
Prepare cake mix by mixing half the cake mix, water, eggs, softened butter, and brown sugar in a large bowl. Add remaining cake mix and mix thoroughly. Fold in chopped nuts. The batter will be thick.
Spread batter evenly in prepared pizza pan. Bake for 10-15 minutes or until lightly golden. Toothpick should come out dry. Do not overbake or the crust will be very hard. Let cool in pan.
Prepare fruit by washing, peeling, slicing, and draining. Place in separate bowls and refrigerate until ready to use. Only slice bananas when ready to use so they don’t turn brown.
Prepare apricot glaze by combining 1 cup apricot preserves and ½ cup or reserved pineapple syrup in a small pot on medium heat. Cook until preserves melt, about 3-5 minutes. Don’t let mixture boil over. Strain and let liquid glaze mixture cool.
Prepare fruit platter: Spread whipped topping over cooled cake. Start with halved strawberries and place fruit on toppin. Follow the outer edge around until completing a full circle of strawberries. Continue making circles with different colored fruits. Make your way to the center following a pattern: Strawberries, chunk pineapple, sliced bananas, seedless grapes in alternating colors. mandarin oranges. Then slightly overlap kiwi slices to form a flower cup. Place 3 whole strawberries in the center of the kiwi cup. Dot platter with blueberries for color.
Drizzle apricot glaze over the top of the cake and refrigerate until ready to eat.
