This is such a great way to go green. Not only is this a vegetarian dish, it also uses a mason jar so you can ditch plastics at lunch! Make multiple meals at once by filling several mason jars at once and storing them in your fridge for future use.
2 tbsp Chef Plums dressing* or a dressing of your choosing
¼ cup Shredded carrots
¼ cup bell pepper, chopped
¼ cup cherry tomatoes, halved
2 tbsp cucumbers,chopped
2 tbsp celery, chopped
1 cup quinoa (cooked) or ½ cup chick peas
¼ cup Shredded mozzarella cheese
1 tablespoon sunflower seeds
2 cups spring mix lettuce
Using a quart size mason jar, pour salad dressing on the bottom of the jar.
Add shredded carrots on top of dressing followed by chopped bell peppers.
Layer cucumbers, celery, and tomatoes on top of the peppers.
Next, add quinoa or chick peas and cheese.
Sprinkle sunflower seed on top.
Stuff the lettuce on top.
Screw your air tight lid on and place in fridge until ready to serve. When ready to shake jar well and enjoy!

You can customize the mason jar salad to include whatever foods you like. Some of my favorite combos are romaine lettuce, shredded carrots, tomatoes, cucumber, feta cheese, and grilled chicken for a Greek mason jar or spinach, strawberries, walnuts, goat cheese and chicken. Just make sure to put your heartier vegetables at the bottom so your delicate vegetables (lettuce, cucumber, etc.) don’t get all soggy from the dressing.
